Tahitian vanilla is not bourbon vanilla. A natural crossbreed gave it a fleshier pod and a scent that runs floral and fruity rather than simply sweet. Every single flower is pollinated by hand, one at a time, by the growers known as the mamas vanille – a skill passed down through generations.

If you bring one thing home, bring the pods themselves rather than an extract. Kept sealed, they hold their aroma for years.
